My Favorite Recipes

Caprese Salad

INGREDIENTS:
2 large tomatoes, sliced
6-8 ounces fresh mozzarella cheese, sliced
Handful of fresh basil
Drizzle extra-virgin olive oil
Sea salt and pepper
1/3 cup balsamic vinegar

Caprese salad is my number one favorite salad!  OK, let’s be honest..it’s the only salad I like :D.  Caprese is a simple, flavorful, refreshing summertime dish.
DIRECTIONS:
(balsamic reduction): In a small saucepan over medium-low heat, bring the balsamic vinegar to a boil.
Reduce the heat to low and let simmer, swirling the pan occasionally, until reduced to about half of the original amount (15 minutes or little bit less) Watch it carefully. Remove from the heat and set aside.  Meanwhile, assemble the salad by layering the tomato, mozzarella, and basil.
Lightly drizzle the olive oil and balsamic reduction over the salad and sprinkle with salt and pepper.

The food there is unbelievably delicious, so much to eat, variety of kinds of food, there's a museum of the ancestors and founders, a curious fact is that a lot of russians live there old people that arrived in the 10's, 20's or before.

I grew there my dad have a little wine cellar there, but the wine its only for us. he buy the tons of grapes and a very good friend of him make the artisanal wine, the wine don't have anything else than grape. no chemical, not reduced with water just grape.
